Practice makes perfect. Once you make a recipe a few times, you’ll be able to make adjustments to improve on your cupcake, be they filling the liner less or more, or frosting techniques.
Go ahead, make a few batches. I don’t think you’ll hear anyone complaining about the leftovers!
Everyone should have a reliable cupcake recipe in their repertoire; a guaranteed crowd-pleaser for people of all ages. Today I’m sharing mine: classic yellow cake and rich chocolate frosting.
Ingredients:
2 sticks (1 cup) unsalted butter, room temperature, plus more for pans
1 1/2 cups all-purpose flour, plus more for pans
1 1/2 cups cake flour (not self-rising)
1 Tablespoon baking powder
1/2 teaspoon salt
1 3/4 cups sugar
4 large eggs
2 teaspoons pure vanilla extract
1 1/4 cups milk
For Chocolate frosting:
24 ounces best-quality semisweet chocolate, finely chopped
1/2 cup plus 1 Tablespoon Dutch-process cocoa powder
1/2 cup plus 1 Tablespoon boiling water
3 sticks (1 1/2 cups) unsalted butter, room temperature
1/2 cup confectioners’ sugar
Pinch of salt
Preheat oven to 180°. Line two standard 12-cup muffin pans with paper liners.
Into a medium bowl, sift together flours, baking powder, and salt; set aside.
In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and sugar until light and fluffy, 3 to 4 minutes, scraping down the sides of the bowl as needed.
Beat in eggs, one at a time, then beat in vanilla. With the mixer on low speed, add the flour mixture in three parts, alternating with the milk and beginning and ending with the flour; beat until combined after each addition.
Divide the batter evenly among the prepared cups so that each is about two thirds full.
Bake, rotating the pans halfway through, until cupcakes are golden brown and a toothpick inserted into the center comes out clean, about 20 minutes.
Transfer pans to a wire rack to cool for about 5 minutes. Remove cupcakes from pan and allow to cool completely.
For Frosting: place chocolate in a heatproof bowl set over (but not touching) simmering water. Turn off heat; stir occasionally until chocolate has melted completely, about 15 minutes. Set bowl on countertop, and let chocolate cool to room temperature, 25 to 30 minutes.
Meanwhile, combine cocoa powder and boiling water in a small bowl; stir until cocoa is dissolved.
In the bowl of an electric mixer fitted with the paddle attachment, beat butter, confectioners’ sugar, and salt on medium-high speed until light and fluffy, 3 to 4 minutes.
Add melted chocolate; beat on low speed until combined, 1 to 2 minutes, scraping down the sides of the bowl as needed.
Beat in cocoa mixture. Use immediately or chill until ready to use. Bring frosting back to room temperature and beat until smooth before using.
Decorate your cupcakes =D

Red Velvet Cupakes
Everyone seems to enjoy Red Velvet Cupcakes covered with lovely swirls of Cream Cheese Frosting. While a year round favorite, their red and white color scheme make them particularly well suited for Christmas, Valentine's Day, and Canada Day. Top each cupcake with a fresh blueberry and you have a festive red, white, and blue dessert for July 4th.

Ingredients:
125 gr. sifted cake flour
1/4 teaspoon baking powder
1/4 teaspoon salt
10 gr. regular cocoa powder
57 gr. unsalted butter, at room temperature
150 gr. granulated white sugar
1 large egg
1/2 teaspoon pure vanilla extract
120 ml. buttermilk or less milk
1 tablespoon liquid red food coloring
1/2 teaspoon white distilled vinegar
1/2 teaspoon baking soda
For Cream Cheese Frosting:
227 gr. cream cheese, room temperature
1/2 teaspoon pure vanilla extract
60 gr. confectioners' (icing or powdered) sugar, sifted
160 ml. cold heavy whipping cream (double cream)
Preheat oven to 175° and line 12 muffin tins with paper cupcake liners.
In a large bowl sift together the flour, baking powder, salt, and cocoa powder.
In the bowl of your electric mixer, or with a hand mixer, beat the butter until soft (about 1-2 minutes). Add the sugar and beat until light and fluffy (about 2-3 minutes). Add the egg and beat until incorporated. Scrape down the sides of the bowl. Add the vanilla extract and beat until combined.
In a measuring cup whisk the buttermilk with the red food coloring. With the mixer on low speed, alternately add the flour mixture and buttermilk to the butter mixture, in three additions, beginning and ending with the flour.
In a small cup combine the vinegar and baking soda. Allow the mixture to fizz and then quickly fold into the cake batter.
Working quickly, divide the batter evenly among the 12 muffin cups and smooth the tops with an offset spatula or the back of a spoon. Bake in the preheated oven for approximately 18 - 23 minutes, or until a toothpick inserted in the center of the cupcakes comes out clean.
Cool the cakes in their pans on a wire rack for 10 minutes and them remove from pan. Let cool completely before frosting. Either spread the frosting with a knife or offset spatula, or use a large 1M Wilton open star decorating tip to pipe the frosting.
For Cream Cheese Frosting: In the bowl of your electric mixer, or with a hand mixer, beat the cream cheese until smooth. Add the vanilla and confectioners sugar and beat until smooth. Using the whisk attachment, gradually add the heavy cream and whip until the frosting is thick enough to pipe. Add more sugar or cream as needed to get the right consistency.
Makes 12 cupcakes =D

Peanut butter Cupcakes
Ingredients:
130 gr. butter
280 gr. sugar
3 eggs
250 gr. peanut butter
180 ml. milk
2 tsp baking powder (optional)
210 gr. flour
Peanut butter frosting:
450 gr. icing sugar
120 gr. soft butter
125 gr. peanut butter
3-4 TBS of milk
Beat the lard and sugar until creamy.
Add eggs and beat well.
Add the peanut butter and beat well .... =)
Sift together the flour and baking powder.
Alternately add the milk, flour and baking powder.
Fill cups with mixture.
Preheat the oven to 180 degrees and bake for 20-25 minutes or until they are golden and toothpick in center comes out clean.
Whisk the sugar with the butter.
Add the peanut butter.
Add milk as needed to create a spreadable cream (do not let too soft ... you want it strong enough)
Decorate cooled cupcake =)

Pistachio muffin
The muffins can be made in many different flavors, in recent months we have seen a lot and today I present a recipe that I tried it myself a few days ago, pistachio muffins! The recipe for these delicious muffins is really simple, you can do it in just half an hour and will be perfect to serve snacks or meals to finish sweetly! The pistachio muffins are also excellent gift idea for Christmas =)
Ingredients:
170 gr. flour
130 gr. white sugar
10 gr. pistachios
100 gr. butter
2 eggs
80 ml. milk
1 teaspoon of baking powder
Preheat the oven to 180°.
In a medium bowl mix all dry ingredients and mix well.
In a large bowl whisk eggs, melted butter and milk, and add dry ingredients to egg mixture. Mix until incorporated.
Chop pistachios not too finely. Add pistachios to dough and mix. Pour the dough into a muffin tin and bake for 20 minutes =)

Guinness Chocolate Cupcake with Bailey's Cream Cheese Frosting
Ingredients:
2 C unbleached all purpose flour
1/2 cocoa powder
1/4 tsp salt
1 C granulated sugar
1/2 C light or dark brown sugar
1/2 C unsalted softened butter
2 tsp vanilla extract
2 egg
1/2 C sour cream
1 1/2 C Guinness or stout beer
For Bailey's cream frosting:
210 gr. of cream cheese, softened
1/2 cup unsalted butter, softened
2 C confectioner’s sugar
4 – 6 Tablespoons of Bailey’s Irish Cream
2 C unbleached all purpose flour
1/2 cocoa powder
1/4 tsp salt
1 C granulated sugar
1/2 C light or dark brown sugar
1/2 C unsalted softened butter
2 tsp vanilla extract
2 egg
1/2 C sour cream
1 1/2 C Guinness or stout beer
For Bailey's cream frosting:
210 gr. of cream cheese, softened
1/2 cup unsalted butter, softened
2 C confectioner’s sugar
4 – 6 Tablespoons of Bailey’s Irish Cream
Preheat the oven to 180°.
In a large bowl briefly whisk together the flour, cocoa powder and salt.
In the bowl of a stand mixer with a paddle attachment or with a hand mixer, beat the butter, granulated sugar, and brown sugar until light and fluffy.
Add one egg and beat until evenly mixed and fluffy, make sure to scrape down the mixer bowl once in a while. Add the second egg and vanilla extract and beat again until light and fluffy.
Add the sour cream and beat in, then with the mixer running, slowly pour in the Guinness.
Sift the dry ingredients into the batter and slowly stir the batter until it is evenly mixed and there are no streaks of flour. Make sure to stop the mixer frequently to scrape down the sides and make sure to mix up any flour pockets hidden on the bottom of the bowl.
Divide 1/4 C of batter into each muffin cup, you’ll get about 20 – 24 cupcakes.
Bake at180° for 20 – 25 minutes. A toothpick inserted into the center of a cupcake in the middle of the pan should come out clean.
For frosting: In the bowl of a stand mixer with a paddle attachment or with a hand mixer, add the cream cheese, butter, and confectioner’s sugar and beat until light and fluffy. Slowly drizzle in the Bailey’s, more or less depending on how boozey you want the frosting, and beat until completely incorporated into the frosting =D

Sugar puffs
Indistinguishable from the real thing, which is to say, eggy, moist, light and springy.
I suspect the problem with the biscuits was just a lack of moisture. Popovers are made of a fairly thin batter, so that wasn’t an issue here. But I’ll test my biscuit theory again sometime soon and let you know.
Ingredients:
2 tablespoons butter, melted
3 large eggs
1 cup milk
1 teaspoon salt
1 1/2 teaspoons sugar
1 cup flour
For the sugar coating:
2/3 cup sugar
1 teaspoon ground cinnamon
4 tablespoons butter, melted
Preheat the oven to 200°. Liberally grease a muffin pan.
For the puffs, put the 2 tablespoons melted butter, eggs, milk, salt and sugar in a blender and whiz for a few seconds. Add the flour and whiz until smooth.
Divide the batter among 9 greased molds.
Bake for 35 minutes, until the puffs are deep brown.
Remove from the oven, wait a few minutes until cool enough to handle, then remove the puffs from the pans. You may need a small knife to help pry them out.
Mix the sugar and cinnamon in a medium bowl. Thoroughly brush each puff all over with melted butter, then dredge in sugar and cinnamon mixture to coat completely. Let cool on a baking rack =)

Cinnamon Apple muffins
This Cinnamon Apple Muffin recipe is super easy to pull together. It doesn't take long to bake them up. They taste SO GOOD with juice, hot tea and coffee; not too sweet but just right. Full of soft, sweet apple bits and the cinnamon just makes them hard to stop eating. Top half the batch with a little brown sugar and oats and they're a fun snack to kill off the late afternoon munchies. Treat yourself to a batch. Bake a batch for your workmates. They will love you for it!
Ingredients:
3/4 cup whole milk
1/2 cup vegetable oil
1 egg
1 medium apple, cored, peeled, small dice
2 cups all purpose flour
2/3 cup sugar
3 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
+ brown sugar to sprinkle
Pre-heat oven at 180°.
In a small bowl, beat milk, oil and egg. Stir in diced apple. Set aside.
In a medium bowl, mix flour, sugar, baking powder, salt and cinnamon. Make a well and pour in wet ingredients. Stir slowly just until flour is moistened--batter will be lumpy. Do not over stir.
Use a 2-inch scooper to divide batter evenly into muffin cups. Should fill cups 2/3 full. Sprinkle with brown sugar topping if you want =D
Bake for 20 minutes until golden brown. Immediately remove from pan =)

Muffin di riso soffiato e gocce di cioccolato
Dal momento che domenica partirò, per non tornare per un mese... non possono dirmi niente di riprovevole se preparo due cose in questa settimana invece che una ^^ per un mese non avranno niente! XD
Ingredienti:
150 gr. farina
1/2 bustina di lievito
1 bustina di vanillina
40 gr. burro fuso
90 gr. zucchero
90 ml. di panna o latte
1 uovo
2 cucchiai di gocce di cioccolato
3 cucchiai di riso soffiato
Lavorare l'uovo con lo zucchero e il burro fuso. Montare con le fruste e aggiungere latte o panna e vanillina. Aggiungere in seguito la farina setacciata con il lievito ed amalgamare. Infine aggiungere riso e gocce e incorporarle bene nel composto. Disporre l'impasto nei pirottini e infornare in forno caldo a 170° per 20 minuti finchè non saranno dorati in superficie =)

Peanut butter muffin
Non avrei dovuto preparare oggi...lo ammetto ^^ ma dovevo togliere di mezzo quel poco rimasto nel barattolo di burro d'arachidi e questa era l'unica ricetta che ne conteneva poco! Per questo motivo la dose è poca, ma per averne il doppio basta giusto il doppio degli ingredienti =D
Ingredienti (per 6 muffins):
110 gr. di farina
1 cucchiaiano di lievito
1 pizzico di sale
50 gr. di zucchero
60 gr. latte
1 cucchiaino di olio di semi
1 uovo
40 gr. burro d'arachidi
50 gr. gocce di cioccolato
Miscelare separatamente in due ciotole i secchi e i liquidi. Montare con le fruste i liquidi unirli ai secchi e amalgamare il tutto. Versare un cucchiaio per ogni pirottino e infornare in forno caldo a 180° per 25-30 minuti =D

Muffin al cioccolato e ripieno di cocco
Era da un po' che non preparavo muffins e la nostalgia iniziava a farsi sentire!!! Quando, girovagando in rete, ho trovato questa ricetta non ho saputo resistere, anche perchè dovevo assolutamente sfruttare la mia restante farina di cocco =D
Igredienti
Per l'impasto:
2 uova intere
1 tuorlo
100 gr di zucchero
40 gr di cacao amaro
50 gr di burro
mezzo bicchiere di latte
75 gr di farina
una bustina di vanillina
mezza bustina di lievito (8 gr)
Per il ripieno:
1 albume
100 gr di farina di cocco
50 gr di zucchero
mezzo cucchiaio di fecola
2 cucchiai e mezzo di latte
Per l'impasto al cioccolato: in un'altra ciotola ho montato le uova e il tuorlo con lo zucchero, poi ho aggiunto il cacao setacciato, il latte, la farina setacciata e il burro fatto sciogliere precedentemente al microonde. Ho mescolato bene e ho aggiunto la vanillina e il lievito, amalgamando.
Ho preparato l'impasto al cocco: in una ciotola ho montato l'albume con le fruste elettriche, poi ho aggiunto lo zucchero, il latte, la farina di cocco e la fecola amalgamando bene il tutto.
Ho versato un cucchiaio del composto al cioccolato in ogni stampino, poi ho versato un cucchiaino del ripieno al cocco, e di nuovo un altro cucchiaio di impasto. Ho cotto in forno già caldo a 180° per circa 20 minuti (controllare con lo stecchino) =)

Muffin speziati con miele e noci
La mia CENTESIMA ricetta *___* Dopo una lotta in cucina per ripulire circa 50 gr. di cacao in polvere rovesciato per sbaglio sui fornelli mentre cercavo di prendere zucchero e farina...ce l'abbiamo fatta =) gia l'impasto sembrava ottimo! E' un tipo di muffin del tutto particolare con un sapore come piace definirlo a me, "rivoluzionario" =D
Ingredienti:
2 cucchiai di miele d'acacia
2-3- cucchiai latte
100 ml olio di semi
1 uovo
300 gr. farina 00
1 bustina lievito
130 gr. zucchero fine
80 gr. noci spezzettate
1 cucchiaino di cannella
3 chiodi di garofano (facoltativo)
1 pizzico di noce moscata
1 pizzico di sale
Prendete due ciotole. In una sbattete appena l'uovo con il sale, aggiungendo poi l'olio, due cucchiai di latte e il miele. Amalgamate bene.
Nella seconda ciotola setacciate tutti gli ingredienti secchi: la farina, il lievito, lo zucchero, la cannella, la noce moscata in polvere e i chiodi di garofano. Sgusciate le noci e spezzatele grossolanamente. Versate il composto liquido sugli ingredienti secchi. Amalgamate il tutto velocemente con un cucchiaio, quel che basta per far assorbire la farina, senza neanche troppa cura. Se risulta troppo secco aggiungere un cucchiaio di latte.
Il composto deve essere piuttosto compatto.
Riempite gli stampini per muffins per 3/4 e infornate a 170° - forno ventilato - per 20'-25'.
Saranno pronti quando, facendo un poco di pressione con il dito sulla cupoletta di un muffin, questa tornerà indietro. Appena sfornati, bucherellate la superficie dei dolcetti con uno stuzzicadenti e irrorateli con altro miele d'acacia tiepido =P
*un consiglio ;) è un sapore molto natalizio per prepararli nel mese di luglio =D

Prendete due ciotole. In una sbattete appena l'uovo con il sale, aggiungendo poi l'olio, due cucchiai di latte e il miele. Amalgamate bene.
Nella seconda ciotola setacciate tutti gli ingredienti secchi: la farina, il lievito, lo zucchero, la cannella, la noce moscata in polvere e i chiodi di garofano. Sgusciate le noci e spezzatele grossolanamente. Versate il composto liquido sugli ingredienti secchi. Amalgamate il tutto velocemente con un cucchiaio, quel che basta per far assorbire la farina, senza neanche troppa cura. Se risulta troppo secco aggiungere un cucchiaio di latte.
Il composto deve essere piuttosto compatto.
Riempite gli stampini per muffins per 3/4 e infornate a 170° - forno ventilato - per 20'-25'.
Saranno pronti quando, facendo un poco di pressione con il dito sulla cupoletta di un muffin, questa tornerà indietro. Appena sfornati, bucherellate la superficie dei dolcetti con uno stuzzicadenti e irrorateli con altro miele d'acacia tiepido =P
*un consiglio ;) è un sapore molto natalizio per prepararli nel mese di luglio =D

Muffin ai mirtilli
Classici dalla tradizione americana e più leggera di quanto ci si aspetti (circa 180 kcal per muffin), ottimi per la colazione o con tè al limone o tè verde =D
Ingredienti:
240 gr. farina
120 gr. zucchero
40 gr. maizena
1 bustina lievito
250 gr. yogurt di soia (io ho usato quello ai frutti di bosco senza pezzi)
80 ml olio di soia (o semi)
buccia grattuggiata di limone (facoltativo)
150 gr. di mirtilli freschi o surgelati
Mescolare bene tutti gli ingredienti (se l’impasto è troppo sodo aggiungere qualche cucchiaio di latte di soia) e solo per ultimo aggiungere i mirtilli freschi o ancora surgelati (mescolare velocemente altrimenti si colora tutto di viola!). Versare dunque nei pirottini posti all’interno di una teglia da muffin e infornare a 180° per 35 minuti =)

Muffin ripieni alla nutella
Sia bianchi che neri, e con farcitura a piacere. Tempo fa scelsi la marmellata, ora se permettete. la NUTELLA regna!!!
Ingredienti (x12):
3 uova
250 gr. farina
200 gr. zucchero
200 gr. burro
1 bicchiere di latte
1 bustina lievito
1 pizzico di cannella
Nutella
+cacao amaro (facoltativo)

Mescolate le uova e lo zucchero, e poi aggiungete il burro ammorbidito. Setacciate la farina e incorporatela gradualmente all’impasto. Aggiungete il latte e il lievito e continuate a mescolare. Se volete potete aggiungere anche un cucchiaino di cannella per dare un sapore intenso ai muffin e 70 gr di cacao amaro se li volete al cioccolato. Dato che già metteremo dentro la nutella io li preferisco senza cacao, ma vengono buonissimi anche al cioccolato con dentro la nutella. Sistemate i pirrottini di carta nella teglia dei muffin. Se non avete la teglia dei muffin potete usare le formine in alluminio che si trovano al supermercato, mettete dentro i pirrottini, poi potete lavarli in lavastoviglie e riutilizzarli. Mettete una parte dell’impasto in ogni pirrottino, e poi aggiungete un cucchiaino scarso di nutella, coprite con dell’altro impasto e ripetete l’operazione per tutti i pirrottini. Mettete in forno preriscaldato a 180°C per circa 20 minuti. Spolverate con cannella e zucchero a velo, se volete, e servite =D

Muffin americani
Appena assaggiati *_* Papà ha dato di matto! XDXDXD credo che si sia innamorato <3
Ingredienti:
115 ml latte
30 ml di olio di girasole
1/2 bustina lievito
1 bustina vanillina
1 uovo
150 gr. farina
50 gr. zucchero
gocce di cioccolato q.b.
Scalda il forno a 180°C, imburra 10/12 stampini e rivestili con carta da forno. Mescola farina, olio, zucchero e lievito, dopo aggiungi latte, uova e vaniglia, continuando a mescolare. Aggiungi i pezzettini di cioccolato e riempi gli stampini per poco più della meta, quindi inforna per 20 minuti =D

Muffin double chocolate
Il dessert è made in USA, proprio come i film The Road e Capitalism: A Love Story *___*Sono davvero perfetti..un sapore..come dire..molto...AMERICANO! =D
Ingredienti:
Versa la farina, lo zucchero, il lievito e il cioccolato in polvere in un' insalatiera, quindi incorpora il latte, l' uovo sbattuto e il burro fuso. Mescola bene il tutto fino a quando diventa un impasto omogeneo. Disponi un primo strato in fondo agli stampini per muffin dopo averli imburrati e infarinati leggermente. Deponi 2 quadratini di cioccolato bianco e copri con un altro strato di impasto. Decora di pepite al cioccolato bianco. Infine, inforna per 15 minuti a 180°C ^^

1 c. da caffè di zucchero vanigliato

Muffin alla marmellata
Ecco come impiegare bene i miei pomeriggi a casa, col sole che illumina la cucina *_* avevo tutti gli ingredienti base a disposizione ed ho scovato questa ricetta semplicissima e sublime =) Questi mini muffin li ho farciti con marmellata di fragole, ma possono essere farciti con qualsiasi tipo di marmellata o crema. E' l'impasto che fa la differenza, e sono deliziosi anche gustati appena sfornati e ancora caldi =P
Ingredienti:
175 gr farina
100 gr zucchero
1/2 bustina di lievito
sale
2 uova
130 ml latte
80 gr burro
marmellata q.b.
Setacciare la farina con il lievito, aggiungere lo zucchero, il sale. A parte mescolare il burro liquefatto e freddo, il latte e le uova. Unire i 2 composti mescolando pochissimo. Versare negli stampini riempiendoli per 3/4, coprire con una noce di marmella. Infornare a 180C° per 20 minuti circa. Veloci, facili e fluffy =D
